It looks like something went wrong, but it\u2019s the correct, compliant result.\u00a0<\/p>\n\n\n\n<p>Here\u2019s why it happens and how to read it.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-why-hot-sauce-uses-a-1-teaspoon-serving-size\"><span class=\"ez-toc-section\" id=\"Why_Hot_Sauce_Uses_a_1-Teaspoon_Serving_Size\"><\/span>Why Hot Sauce Uses a 1-Teaspoon Serving Size<span class=\"ez-toc-section-end\"><\/span><\/h3>\n\n\n\n<p>Every Nutrition Facts panel is built on the Reference Amount Customarily Consumed, the RACC, which the FDA assigns by food category in <a href=\"https:\/\/www.ecfr.gov\/current\/title-21\/chapter-I\/subchapter-B\/part-101\/subpart-A\/section-101.12\" target=\"_blank\" rel=\"noreferrer noopener\">21 CFR 101.12<\/a>. For hot sauce, the RACC is 1 teaspoon, or 5 grams. That tiny reference amount is the reason the panel reads the way it does. There simply isn\u2019t enough of any nutrient in a teaspoon for most of them to register once the FDA\u2019s rounding rules are applied.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-calories-sodium-and-dv-on-a-hot-sauce-label\"><span class=\"ez-toc-section\" id=\"Calories_Sodium_and_DV_on_a_Hot_Sauce_Label\"><\/span>Calories, Sodium, and %DV on a Hot Sauce Label<span class=\"ez-toc-section-end\"><\/span><\/h3>\n\n\n\n<p>Say a teaspoon of your sauce contains 190mg of sodium. Under the <a href=\"https:\/\/foodlabelmaker.com\/gb\/regulatory-hub\/fda\/rounding-rules\/\">FDA rounding rules<\/a>, sodium above 140mg rounds to the nearest 10mg, so 190mg displays as 190mg. Against the 2,300mg Daily Value, that\u2019s 8% DV. Everything else in that teaspoon is negligible. Calories come in under 5 and display as 0, total fat rounds to 0g, total carbohydrate falls below 0.5g and rounds to 0g, and protein rounds to 0g.<\/p>\n\n\n\n<p>So the finished panel reads: 0 calories, 0g fat, 190mg sodium (8% DV), 0g carbohydrate, 0g protein. A column of zeros with one real number. That is exactly what the FDA expects, and shrinking the serving size to make the sodium look smaller is a misbranding risk rather than a fix.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-why-most-hot-sauces-can-t-be-labeled-low-sodium\">Why Most Hot Sauces Can\u2019t Be Labeled \u201cLow Sodium\u201d<\/h3>\n\n\n\n<p>Because the per-serving numbers look so small, it\u2019s tempting to add a \u201clow sodium\u201d claim. Under <a href=\"https:\/\/www.ecfr.gov\/current\/title-21\/chapter-I\/subchapter-B\/part-101\/subpart-A\/section-101.61\" target=\"_blank\" rel=\"noreferrer noopener\">21 CFR 101.61<\/a>, \u201clow sodium\u201d requires less than 140mg per RACC, and \u201csodium free\u201d requires less than 5mg. Salt is usually a lead ingredient in hot sauce, so both are out of reach for most recipes.
